AD- How to bake: | A winter wonderland themed cupcake wreath using the Breville HeatSoft hand mixer

You know that Christmas is fast approaching when all of the festive cupcakes, cookies and cakes come out of hiding and decide to make an appearance. In fact, I’d say that festive themed food/baking might just be one of my favourite things to do over Christmas actually. 

And this year it’s even EASIER to bake the day away thanks to the amazing invention that is the Breville HeatSoft™ hand mixer. Gone are the days of spending hours trying to soften your butter to make buttercream because the Softening technology brings ingredients to room temperature 12x quicker... and makes your cakes fluffier. 

Better still, the HeatSoft™ hand mixer has seven speed settings, 3 different attachments (x2 beaters, x2 dough hooks and x1 whisk) and a handy storage case to keep your kitchen tidy. 

To test the HeatSoft™ hand mixer out, I decided to make a winter wonderland themed cupcake wreath. This was the perfect bake to test out the HeatSoft™ as it involves quite a lot of buttercream and would usually take me a while- but not this time. 

Anyway, I'll stop boring you all with 'My life has been changed for the better thanks to the HeatSoft™ function” ramble, and leave you with the most festive cupcake recipe idea, enjoy...


The ingredients you'll need; 

Cupcakes: 
•460g butter
•460g caster sugar
•460g self-raising flour
•8 medium eggs
•3 tsp vanilla extract 
•2 tsp baking powder 
•300g chocolate spread (for the middle of cakes) 

Buttercream:
•415g unsalted butter
•475g icing sugar
•2 tsp salted caramel flavouring 
•2 tsp whole milk
Mint green food colouring 

Decoration:
•Mini fondant penguins (homemade) 
•Fondant snowflakes 
•Edible silver glitter 



Method: 

Cupcakes 
1.) Before you get started you'll want to pre-heat the oven to 190c/Gas 5 and set out your cupcake cases of choice ready for the mixture. 

*Psst, I went with blue polka dot cases to carry on the winter wonderland theme, but if you don't fancy being a copycat, any will do. 

2.) Have you made a decision on your cupcake cases yet? Yes? Then you're ready to get started. In a mixing bowl, cream the butter and sugar using the Breville HeatSoft™ hand mixer until it's light and fluffy. 

3.) The next task is to gradually mix in the eggs. Sift the flour and baking powder into the mixture gradually and mix well to combine. Finish by adding in the vanilla extract.

4.) Then carefully spoon the mixture into your cupcake cases- you'll be feeling like you should maybe have a slot on This Morning, cooking alongside Gino with your 'I'm so organised' ways - and bake for 25 minutes. Oh, and screw trying to be healthy/a grown up adult... I give you my permission to lick the bowl. 


Buttercream: 
1.) Using the Breville HeatSoft™ hand mixer (with the HeatSoft™ function on) , beat 415g of butter for at least 5 minutes so it's extra fluffy, and then sift in 475g of icing sugar into the same bowl. 

2.) Combine the icing sugar, butter, caramel flavouring, and whole milk, and food colouring and mix for a further 5-10 minutes. PS- don't forget to pop the finished buttercream into the fridge for a good ten minutes to set as it makes for much neater piping. 

3.) Now for the chocolate core. To do this I usually press the bigger circle side of a piping nozzle into the middle of my cupcakes to take the middle of the sponge out, I then add a tsp worth of chocolate spread to the middle, and then cover with the remaining cupcake core. 

HINT:  To mimic my cupcakes completely you'll want to use a piping bag, complete with a Wilton 2D nozzle to pipe your buttercream. Rule #5 in the baking world; never attempt to pipe buttercream onto warm cupcakes, the result...  A disastrous mess. 

4.) And last, but certainly not least... decorations. For my cupcake wreath I used a silver cake board to place the cupcakes on. I then filled in any gaps with my homemade fondant decorations: penguins, snowflakes, igloo’s. To finish I sprinkled with pearls and edible glitter. Feel free to decorate your wreath however you wish though, be as creative as possible! 

And hey, there you have it, your very own winter wonderland cupcake wreath, as simple as that- will you be attempting?

Okay, so promise me that you won’t laugh? Are you sure? I’ll go ahead and continue then... In case you didn’t know I’ve visited Gran Canaria 20+ times. Yes 20 something times (and I say 20+ times as I really have lost count now.) So when it comes to food, drink and trip recommendations you could say that I’m your go to gal as I now consider myself as a bit of an expert... (Hey, if blogging fails maybe I’ll just have to become a rep for the resort, who knows ;) )
